It's Fall. I L♥ve apples! We took an apple orchard tour week before last at Honey Suckle Hill Farm but only got one apple each from there.
I have had apples on my mind ever since.
Then on Wednesday at The Turnip Truck I saw mini apple pies on sale for $3.99 each. The kids begged for one, and I said No. Did I mention they were $3.99? for single serving pies . . .
But I've had apple pie on my mind ever since.
So today I decided I wanted to make an apple pie. Looking through recipes, I saw I would need about all the apples in the house to make one. Apples are healthy. Apple pie is fattening. I didn't want to use up all those declicious healthy apples on pie. So I googled "mini apple pies in muffin pan" and found this wonderful blog ~~~> http://www.noveleats.com/dessert/mini-apple-pies/.
I called the kids in from the swing set and told them the plan.
As I got to preparing apples, they both had to have one, so I had to wash and peel more.
The recipe called for two large apples, but my apples are small, so I used three.
We tried making bottom and top crusts, but we didn't have quite enough dough, so we wound up making big bottoms and folding them over the top. Not as pretty as the ones in the food blog, but for our little family, it was fine!
Matthew had a plate in his hand before I could get the pies out of the oven!
We played outside while the pies were baking, and as we came inside, the delicious smell had taken over the house. We were all ready for our pie!
Matt wasn't home for pie making, but we saved him one.
It was really hard not to eat it!!
