Linguine with roasted red bell peppers and pesto

We really have been doing lessons this week, not just eating. I have a post on the past two week's lessons almost ready, but just one more food post first. I started eating meat again for a bit over the past few months. I believe that many times when we crave things, it's because we need it. (Not french fries maybe, but foods that offer nutrition). While I don't believe meat is healthy, it does offer some nutrients that can be challenging for vegetarians to get. And I was craving meat badly for a short time. So I ate it occasionally for a few months, then became totally disgusted with it, so I'm back to vegetarian. My diet will never be 100% anything. If I want a piece of tilapia my husband cooks, I'm going to eat it. But I'm mostly vegetarian. On top of being vegetarian, I'm working to lose 15 lb by summer. So eating has been a fun challenge lately. Today I made this delicious pasta. It's linguine with roasted red bell peppers, garlic, and pesto. I boiled about 1/4 lb of linguine in salted water, sauteed 3 cloves of garlic and a cup or so of the roasted red bell peppers in olive oil. Once the linguine was done, I drained it and tossed it with the garlic and peppers and added some salt and pepper. Then I added 1 teaspoon of pesto and stirred to coat the pasta. If you make this, go easy on the pesto! One "serving" has 21g fat!! Before you vow never to touch pesto again, keep in mind, one serving is 1/4 cup. That's a lot! So if you use 1 teaspoon in a pot of pasta, no biggie. But if you go crazy with the pesto, you're adding a lot of unnecessary fat. This was delicious by the way. . . And my kids wouldn't touch it.
